Our Hearty Lentil Soup is so filling, you can enjoy it as a main dish soup or certainly have a cup as a starter for the rest of your meal.
1 cup finely chopped onion
1 cup chopped red or green bell pepper
1 cup chopped celery
1 cup chopped carrots
1 cup dried brown lentils, rinsed, drained
1 teaspoon dried oregano
3 cups water
3 cups low sodium beef broth
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
Coat a large soup pot with cooking spray. Over medium heat, cook onion, bell pepper, celery, and carrots until tender, about 6 to 8 minutes, stirring occasionally.
Add the remaining ingredients, mix well, and bring to a boil over high heat. Reduce heat to low, cover, and simmer 50 to 60 minutes, or until lentils are tender, stirring occasionally.
