Mediterranean Chicken Pita

Ingredients:

1 chicken breast
1 whole pita
2 T hummus
1 large roasted red pepper (sliced)
1 T crumbled feta
1 T black olives
1/4 tomato sliced into cubes
5 slices cucumber
1 small handful mixed greens or spinach
2 T finely chopped onions 

Directions:

Saute' cut up chicken breast. Saute' until chicken is fully cooked and white (or use 4 -5 oz precooked and shredded chicken)

Split open a pita and spread one side with 2 tbsp. hummus.

Add cooked chicken to pita

Mix 1 large roasted red pepper (sliced), 1 tbsp. crumbled feta, 1 tbsp. black olives, 5 slices cucumber, onion, tomatos greens. Add mixture to pita.
