1 1/2 lbs roasted turkey breast or leftover turkey
1 med to large onion
3 or 4 garlic cloves
1 4oz can green chiles
1 T olive oil
1 T ground cumin
2 cans (16 oz each) white beans
2 cans ( 14 1/2 oz each) fat free reduced sodium chicken broth
salt to taste when serving
Tabasco to taste
Remove skin from roasted turkey and chop only the meat to measure 4 cups. Chop onion finely. Crush garlic. Drain chiles.
In a pot, heat oil until hot. Add onion and cook over med/high heat for 3 minutes until soft, keep stirring. Stir in garlic, cumin, chiles and cook 1 minute.
Drain and rinse beans. Add beans, chicken broth, turkey to the pot, cover, and bring to boil. Lower the heat, remove cover and simmer, stirring occasionally, for 10 minutes, until flavors have blended.GO BACK
