Tuna Stuffed Red Pepper

Ingredients:

1 can water packed tuna
1 T fat free or low fat mayo
2 T sweet relish
1 tsp lemon juice
1/4 tsp black pepper
2 scallions (green onions) finely chopped
1 large red pepper
dash salt to taste

Directions:

Mix everything but the red pepper into a bowl. Slice red pepper in half and clean out seeds. Scoop tuna mixture into each half and add salt to taste if desired. Low carb and delish!
