1 Apple of your choice
2/3 Cup Pumpkin Puree (not the pumpkin pie mix)
1 Cup Almond or Coconut Milk
1/2 Cup Rolled Oats
1/2 Tbsp Coconut Oil
1 Tbsp Cinnamon
1/4 Tbsp Nutmeg
1/4 Tbsp Ground Ginger
* Optional: 3/4 Scoop Vanilla Low Carb Protein Powder
2 Tbsp Pumpkin Puree
Dash of Cinnamon, Nutmeg and Ground Ginger
1 Tbsp Maple or Light Agave Syrup
Warm a medium size pot over medium heat. While heating up chop your apple and open the can of pumpkin puree.
Once pot is heated add the coconut oil and chopped apple, sauté for a few minutes. Next add in your oats and milk. Let the mixture thicken a bit and then add the pumpkin puree and stir together. Let meld for 3-5 minutes, lower heat and add in your spices. If opting to add protein powder; do so now. Once your desired consistency is reached, pour oats into a bowl.
For the topping combine the pumpkin, spices and syrup and pour all over the oats, add the chopped nuts over top and enjoy.GO BACK
